Mrs. Matthews is, quite possibly, the pickiest eater since Mikey from the Life cereal commercials. She's not even very excited by sweets. If need be, she could live on a diet of Cheerios and pizza. As you can probably reason from this, food is hardly important to her and she has done little to learn how to prepare it. That makes me the chef of Matthews Manor.
I am actually fine with that, because I do like to eat, and I enjoy cooking. In fact, as a result of Mrs. Matthews' pickiness, and having a two year old, it isn't uncommon for me to cook three meals in a single evening.
Anyway, after the jump, I share one of my favorite recipes.
Walt Disney's Oatmeal Cookies
Yield: 48 servings
2 cups Flour
1/2 tsp Salt
1/2 tsp Baking soda
1 tsp Baking powder
3/4 tsp Cinnamon
1 1/3 cup Butter
1 1/4 cup Granulated sugar
3/4 cup Brown sugar
2 lg Eggs
2 TB Water
1/2 tsp Vanilla
2 1/2 cup Uncooked oats (not instant)
1 1/4 cup nuts
- In medium bowl, combine flour, salt, baking soda, baking powder and cinnamon. Set aside. I like to use a fork or wire wisk to mix.
- Cream butter in very large bowl.
- Beat in granulated (white) and brown sugars.
- Beat in eggs, 1 at a time.
- Add water and vanilla and mix until well blended, about 4 minutes.
- Mix oats, nuts and flour mixture into sugar mixture and stir until thoroughly blended.
- Drop by large tablespoons onto ungreased baking sheet.
- Bake at 350 degrees 9 to 14 minutes, or until light-brown in color.
- Cool on baking sheet before removing from pan.
